⚖️ 80/20 Seeding Method Allocation: Form V Crystals
🥣 Melted Base (80%): 400 g
🍫 Finely Chopped Seed (20%): 100 g
Stir seed vigorously into melted base at 45°C until temperature drops to Phase 2. Seed introduces billions of stable Form V crystal templates.
🔬 Crystallization & Bloom Troubleshooting:
Fat Bloom (Streaks / Softness):
Occurs when chocolate was poured too warm (>33°C). Cocoa butter separates and recrystallizes in unstable Form IV.
Sugar Bloom (Grainy / Moisture):
Occurs from condensation or wet utensils. Water dissolves surface sugar; drying leaves rough white crystals.
The 3-Minute Parchment Test: Dip the tip of a paring knife or spatula into the tempered chocolate and leave at room temp (20°C). Properly tempered chocolate sets firm, satiny, and streak-free in 3 to 5 minutes.
