A chimney is an engine: hot gas inside, cold air outside, and the density difference pulls the fire along. This works out how much draught your flue actually generates, how fast the gas moves, how much it cools on the way up, and whether it will still be above the condensation point when it reaches the pot — which is the difference between a clean flue and a chimney fire waiting to happen.
